Welcome to Cidrerie de la Huppe , where every sip tells a unique story of terroir and passion.
We take care to select old, tall-stemmed varieties, those forgotten gems that make our region famous. These majestic, untreated trees are the guardians of preserved biodiversity.
What sets Cidrerie de la Huppe apart is our commitment to ethical and sustainable production . Every fruit we use is harvested within a 20-kilometer radius of our cider house. This proximity strengthens our ties with local stakeholders and helps limit our carbon footprint.
After an initial selection in the field and a maturation phase in palox, the fruits are sorted, washed and crushed.
The juices are made from a blend of around fifteen old varieties of untreated, tall-stemmed apples and pears.
The juices are cold settled, then comes the fermentation phase (indigenous yeasts). Then, they are aged on fine lees in wood.
The ciders and perries thus obtained are dry, without sulphur, undosed, unfiltered, in short... NATURAL.
We believe in an approach that respects the land and traditions, highlighting intense and original flavors.
All our Ciders & Perrys are undosed, unfiltered , and sulphur-free.

Experiences
After obtaining a Scientific Baccalaureate with an option in environmental agronomy at Legta Rouffach, I continued my studies in Brive la Gaillard to obtain a BTS in horticulture in arboriculture.
In 2000, I took my first steps into the world of work with the pioneers of organic farming .
I have worked with various professionals:
Jacoby, arborist in Haute Saône
Jean-Pierre Frick and Marc Tempé, winegrowers in Alsace
Michel Gougeot, winegrower and arboriculturist in Lorraine
Sylvain Dittière, winegrower in the Pays de la Loire.
Due to the complexity of agricultural installation in Alsace and the high price of land, at the end of 2000, I decided to turn to organic gardening as a service provider.
Since 2020, I have returned to my first passions by setting up as a farmer in Soultzmatt, thanks to the Cidrerie de la Huppe.
